This Introductory HACCP course, also known as basic HACCP training, is ideal for food professionals starting their HACCP journey.

This HACCP training course is designed to:

  • review the philosophy and principles of Hazard Analysis and Critical Control Point (HACCP),

This course is based on:

  • Codex Alimentarius General Principles of Food Hygiene CXC 1-1969 (2023 Latest revision),
  • New Zealand Qualification Authority Unit Standards 28265 (Level 5) and 28264 (Level 4).

Ray Haddad

Ray is the Principal Trainer & Managing Director at Food Surety Limited. He has worked in the food industry in quality assurance roles, auditing, consulting, training, instructional design, workplace assessment and as an advisor in international food safety projects. This varied experience has given him a depth of understanding of the needs and the pain points among the different parties in the food industry.

Since 2007, Ray has built a proven track record conducting hundreds of audits including external third-party certification audits as an auditor/verifier recognised by the New Zealand Ministry for Primary Industries (MPI). In addition, he has trained thousands of food professionals from government agencies, NGOs, academia and businesses across the whole supply chain from farm to fork and across the different sectors, not only in New Zealand but in Southeast Asia and the Middle East.

Ray is driven by food professionals’ experiences of light bulb moments and breakthroughs in their thinking. He enjoys supporting them protecting food for all.

Susannah Roelofsz is a Senior Trainer & Technical Specialist at Food Surety. She holds a Master of Science in Microbiology and brings 25 years of experience across scientific research, laboratory services, food manufacturing, food safety and quality auditing, training, and technical leadership.

Susannah has conducted numerous first-, second-, and third-party audits, delivered extensive industry training, and worked closely with stakeholders across the food supply chain to strengthen compliance and capability.

She is a third-party certification auditor for BRCGS, regulatory, and customer standards, with extensive practical experience across the food industry in New Zealand and Australia.

Food Surety’s HACCP training courses are aligned with NZQA Unit 28264 HACCP training (not reported) and the requirements of the New Zealand Ministry for Primary Industries (MPI), local New Zealand councils and recognised by MPI Food Act 2014 and Animal Products Act 1999 verifiers and evaluators.

It is very less likely that you need the actual unit standard reported to NZQA so we don’t waste your time copying answers into a lengthy assessment that has limited added value. Our courses are internationally recognised, practical and focuses on adding real value to you and your workplace.
